Fine fusion dining at La Verticale

La Verticale is a “uniquely Vietnam fine dining experience,” recommends Rusty Compass. Set in a “narrow 1930s villa,” the menu contains the “best fusion combinations” of French and Vietnamese cuisine. Headed by French chef Didier Corlou, who is “one of Hanoi's biggest food personalities,” his approach makes for a “unique fine-dining experience,” writes AFAR. Examples of Corlou`s “classic east meets west styling” included “Duck Foie gras  with Lemongrass, Vietnamese spring roll with Black Truffle and Pork nougat with Caramelised cream and young Vietnamese Rice,” writes Cumbria Foodie. And spices like “wild pepper, salt flower seed, caviar from the garden (salted coriander seeds) and ambrette seed” were incorporated into the sauces and rubs.
